Overwintering potatoes grown in tire stacks

 Last year I planted a small crop of heritage blue potatoes, using the stack-of-tires method. This was my first try at growing spuds, and I'm not sure if I needed to harvest all of them before frost set in, or if I can harvest them on an as-needed basis. Thoughts?
